We raise grass fed beef, poultry and we grow about 6 different varieties of garlic. Last year was our first year farming together as a business, but have been growing garlic for a few years and learning about raising cattle for the past two. Although we didn't grow up as farmers, we have a great love for the outdoors, animals, food and would like all of these things to be given the respect and attention they deserve to create a sustainable environment for ourselves and others. Together we also run Heather's Hearth, which is a small on-farm bakery that focuses on organic sourdough bread and freshly ground flour. The bread is all naturally leavened using no instant yeast, made in small batches by hand and baked in a wood fired earthen oven. Most varieties of bread contain at least 25% or more fresh ground flour in them. This grain is bought from local farmers and is ground less than 24 hours before using it. Depending on varieties there can also be an assortment of these organic ingredients: Whole Rye flour, Kamut flour, Spelt flour, Oats, Honey, Sunflower Oil, flaxseeds, sesame seeds, pumpkin seeds, sunflower seeds, cranberries, garlic Practices (our standards for raising or making our products) Sourdough Bread: We use all organic ingredients, 90% being certified organic. Some of the grain we buy from local farmers is raised using organic methods, but is not certified. We know the farmers we buy from and trust them. Salt used in the bread is always sea salt. Our breads are made using the simplest but highest quality ingredients we can find, which is naturally reflected in the flavour of the bread. Most of our products other than grain are bought from Mountain Path, which is a local Eastern Ontario company and grain mill providing organic products. The wood we use in the oven is free off-cuts from local sawmills and a local timberframe builder. We try to always burn clean fires when heating our oven. Garlic: Our garlic is grown using organic methods, but is not certified organic. We believe in fostering soil fertility and healthy bacterial growth in our soil using cover crops, mulching, composted manure, minimal tillage, manual weeding and crop rotation. Diversity in our garden and leaving wild spaces for beneficial insects and other plants is another way we keep the environment around us and our crops healthy. Grass-fed Beef: Our cattle spend the whole growing season on pasture eating grass and other leguminous greens. They are rotated to new pasture almost every day, which promotes the health and productivity of the pasture growth as well as the cattle. Our cattle are never fed any grain and no growth hormones or antibiotics are given to them. Pastured Poultry: Our chickens and turkeys are fed all-organic, non-GMO feed from Homestead Organics. They are raised as small chicks in a warm, clean brooder with natural light and then are kept in enclosed chicken tractors that are moved to fresh pasture everyday. In supplement of their feed, they eat grass, insects and other plants. Besides the white meat chickens, we also raise a small amount of heritage meat breeds that take longer to raise, have less meat, but more flavour.
